Carolina Ingredients Blog

Carolina Ingredients is a custom seasoning manufacturer and spice distributor that formulates blends to a specific Scoville heat target, from a gentle paprika warmth to a Carolina Reaper challenge chip. Our R&D team builds the heat to your number and keeps it there, batch after batch.
That consistency matters because chiles vary by crop and harvest. Two lots of the same cayenne can land thousands of Scoville Heat Units (SHU) apart, and a seasoning that swings in heat means complaints and lost reorders.
Heat is measured in SHU or ASTA pungency units (1 ASTA unit is roughly 15 SHU). A pepper's rating describes the raw chile. Your seasoning's heat is lower because the chile is diluted by other ingredients, and perceived heat also depends on usage rate and the fat, sugar and acid in the food. We can build to a blend SHU number, match a product you already sell, or hit a tier such as mild, medium, hot or extreme.
- Define the target: an SHU or ASTA number, a product to match, or a heat tier, plus your application and label needs.
- Choose heat sources for flavor as well as heat: chipotle for smoke, habanero for fruit, cayenne for clean, fast heat.
- Standardize against each ingredient's certificate of analysis, fine-tuning with capsicum extract where tight control matters.
- Bench test on your actual product in our R&D facility.
- Lock the spec so every production run is built to the same number.

Fine-tuning heat without changing flavor |
- Mild: Smoked paprika BBQ rub with a touch of ancho for color and depth, with almost no burn.
- Medium: Chipotle ranch snack seasoning, or Korean BBQ with gochugaru heat.
- Hot: Cayenne-forward Nashville hot chicken seasoning, or chile de árbol and lime tortilla chip seasoning.
- Extreme: Mango habanero wing rub, ghost pepper jerky, or a Carolina Reaper challenge chip standardized so every chip hits the same.
Each can be tuned to briefs like "medium, but closer to hot" or "our current Buffalo, 20% hotter."
We buy heat ingredients against pungency specifications and adjust for lot variation so the finished blend stays on target, all under our SQF food safety program. Hot seasonings can also be formulated as USDA Certified Organic, Non-GMO Project Verified, vegan or clean label.
